Moringa Vegetable Soup

Ingredients:

1 tbsp olive oil, 1 small onion (chopped), 1 carrot (diced), ½ cup spinach, 1 small zucchini (chopped), 1 tsp moringa powder, 3 cups vegetable broth, salt, pepper, and a squeeze of lemon juice.

Instructions:

Heat olive oil in a pot, add onions, and sauté until translucent. Add carrots and zucchini and cook for 3–4 minutes. Pour in the broth and bring to a simmer. Stir in spinach and moringa powder, and let it cook for another 3 minutes. Season with salt, pepper, and lemon juice. Serve warm.
